Cinnamon Apple Dessert Chaffle

This cinnamon apple chaffle with vanilla bean sauce is simply divine! It’s the perfect fall dessert recipe that will remind you of a delicious warm apple pie, but it’s actually keto and low carb friendly. The vanilla bean sauce makes this cinnamon apple chaffle ooey, gooey and downright indulgent.

Ingredients

  • Vanilla Bean Sauce:
  • ½ teaspoon monk fruit sweetener
  • ½ teaspoon vanilla extract
  • 1 egg yolk
  • 1 cup whipping cream
  • 1 tablespoon ghee or butter
  • 2 ounces cream cheese softened
  • Vanilla bean whole
  • Chaffle:
  • 2 tablespoon coconut flour
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • ½ teaspoon monk fruit sweetener
  • 3 large eggs
  • ¼ cup granny smith apple skinned + diced (or 1 tablespoon natural erythritol apple flavoring)
  • ¾ cup mozzarella cheese shredded
  • ¼ cup mild cheddar cheese shredded

Instructions
  • Vanilla Bean Sauce:
  1. In a medium saucepan, add heavy whipping cream, ghee, and vanilla bean.
  2. Heat over medium high heat until just starting to boil, then add sweetener and lower heat and simmer for 10 minutes. Remove vanilla bean and scrape remaining vanilla seeds into whipping cream, then discard bean.
  3. Remove from heat and add in egg yolk while whisking vigorously.
  4. Stir in cream cheese until melted.
  5. Put vanilla sauce in heat safe container and place in fridge to cool.
  • Apple Chaffle:
  1. Preheat waffle maker and spray generously with low carb non-stick spray.
  2. In a large mixing bowl, add egg and beat until frothy.
  3. Add vanilla and cheese and beat until well combined.
  4. In a small mixing bowl, whisk together flour, baking powder, sweetener, and cinnamon.
  5. Add dry ingredients to egg mixture and mix until just combined.
  6. Gently fold in diced apples.
  7. Spray waffle maker with cooking spray.
  8. Pour batter into waffle maker on medium, high heat and cook until starting to brown on the outside – about 4 minutes.
  9. Cool “chaffle” slightly, then top with vanilla sauce.
